Product description

Japanese A5 Wagyu Tenderloin – The Rarest, Most Tender Cut from JM FOOD

What Is Japanese Wagyu Tenderloin?

Tenderloin is a cut taken from the inner loin of the cow — specifically the end section near the lower back, one of the least-worked muscle groups in the animal's body, which is why it contains almost no connective tissue and is exceptionally tender. When this cut comes from Japanese Wagyu cattle, it becomes one of the most premium and valuable beef cuts on the market.

Because of its specific location, each Wagyu carcass yields only a small amount of tenderloin — typically around 6–8 kg out of the total dressed weight. This limited yield, combined with its outstanding quality, is why Wagyu Tenderloin is consistently priced higher than other cuts such as striploin, brisket, or chuck.

Japanese Wagyu beef is graded on a 15-level scale, from C1 to A5, based on standards set by the Japan Meat Grading Association (JMGA), which evaluates color, brightness, fat ratio, and overall meat quality. A5 is the highest grade, representing the finest marbling and the most consistent quality.

Key Characteristics of Wagyu Tenderloin

The most tender cut of beef — coming from a muscle group with minimal movement, the tenderloin has a fine, almost gristle-free grain that delivers a signature melt-in-the-mouth texture.
Delicate marbling — compared to other Wagyu cuts, tenderloin has a lower fat ratio but still retains fine, evenly distributed marbling, giving it a light, non-greasy richness.
Extremely limited yield — making up only a small fraction of each carcass's total weight, tenderloin is always regarded as a rare and commercially valuable cut.
Uniform, easy-to-portion shape — its long, cylindrical form makes it easy to slice into evenly thick portions, ideal for standardized set menus and consistent plating.
Deep-frozen to import standards — the product is deep-frozen to around -18°C immediately after fabrication, preserving quality throughout transport and storage, with a shelf life of several months when stored correctly.

Nutritional Value of Wagyu Tenderloin

As a red meat, Wagyu tenderloin contains significant amounts of iron and zinc, supporting the body's blood-forming processes. It's also a good source of protein and essential amino acids for muscle maintenance and development. In addition, this cut contains vitamin B12, which plays a role in nervous system function. Thanks to these nutritional qualities, Wagyu tenderloin is valued not only for its flavor but also as a suitable addition to nutrient-focused menus.

Culinary Applications

Thanks to its tenderness and distinctive shape, Wagyu Tenderloin is commonly used in the following dishes:

Pan-seared or grilled steak — the most popular preparation, preserving the meat's natural tenderness and flavor. Typically cut about 3–3.5 cm thick, lightly seasoned with salt and pepper, then seared over high heat for a short time.
Premium hot pot — sliced thin for hot pot, allowing the meat to cook quickly while retaining its tenderness and natural sweetness.
Fine-dining set menus — its even, attractive shape makes it easy to portion consistently, ideal for precisely measured set menus at upscale restaurants.
Light seasoning pairing — since the meat already has a rich natural flavor, chefs typically favor simple seasonings such as salt, pepper, butter, garlic, and rosemary to let the meat's character shine.

Who Is This Product For?

Japanese Wagyu Tenderloin suits steakhouses, fine-dining restaurants, 4–5 star hotels, premium hot pot restaurants, as well as importers and food distributors looking to add a premium Wagyu beef line to their product range.
